Back to school meals made easy – Chicken Tortilla soup & strawberry popsicles

 

Its almost that time… back to school time!

Those first few weeks of the kids going back to school, things can be a very busy and a little hectic!  I am going to share a few recipes, tips & tricks that help when I know we will be busy.

I love this recipe and so does our family:

FIRST- DINNER: 

Slow cooker chicken tortilla soup  (aka: MEXICAN CHICKEN VELVEETA Soup)  
This recipe will serve 8-10 people and you can prepare it in 15 minutes, before you leave the house in the morning.

Ingredients:
1/4 cup butter
1/4 cup flour
3. cups chicken broth
1 cup milk
8 oz. VELVEETA cheese
10 oz. can of tomatoes (my husband likes the one with chilies, too)
2 cups shredded, cooked chicken
1 teaspoon chili powder
1 teaspoon cumin

 

FIrst, just melt the butter in a skillet and then stir in the flour.  Stir it constantly for a couple of minutes, until it is a paste-like texture.
Wisk in the milk and chicken broth (slowly).
I then take this and put it into the crock pot.
I add the rest of the ingredients and put it on LOW.
 It is ready when I get home!
Top it with some tortilla strips for a little extra kick! 

Serve it with a side salad (topped with some KRAFT Ranch dressing for the kids).

For the kids after dinner snack, we can’t go wrong with these Strawberry Popsicles!  They are so easy to make and the kids LOVE them! 

2 ingredients- strawberry popsicles made with REAL strawberries!! So easy, delicious & low fat/calories!

Ingredients:

4 Cups Fresh Strawberries
1/3 cup KOOL-AID Tropical Punch Flavor (Sugar-sweetened soft drink mix)

Other than making an easy dinner, here are some TIPS TO MAKE the “GOING BACK TO SCHOOL TIME” STRESS FREE:

1). Prepare for back to school lunches ahead of time.
2). Stock up before school starts.  If you need to stock up on lunchbox supplies, Dollar General has you covered…
3). Make easy lunches that the kids will love!  My kid’s favorites are the CAPRI SUN Big Pouch with a LUNCHABLES UPLOADED Lunch Combinations.   This is a special treat and they love it!   Its a win/win because it is so fast & easy for me and they think its the best lunch!

Ps- While you are out, buy some MAXWELL HOUSE coffee, which will wake you up and get you moving on these busy mornings!
You might want to try waking up 30 minutes before the kids, too.  This is hard for me.  I really have a hard time getting out of bed (so I put my alarm far enough away that I have to get out of bed to turn it off.  This makes it less likely that I will get back into bed.)   See more tips on how I get the kids ready for school in the mornings quickly and without confusion.
