These are the most adorable Bunny Bottom Cookies! Easy-to-make Easter treats, these soft sugar Easter cookies taste as good as they look. They are simple to put together and they’re the perfect Easter snack— or Easter Basket fillers when wrapped up in a treat bag. 🙂 These DIY bunny cookies will be a hit for your family & friends.

Every year I get excited about Easter!  Easter Egg hunts at churches,  Easter Scavenger hunts, Easter desserts on Pinterest, and Easter Egg designs (like these Minion Easter Eggs!) that are cuter than last year.

With the busy lives we lead as moms we need new recipes that are as simple as they are fun. As Lent Ends, we can use this time to celebrate Easter with our family. During holy week, I like to make these Easter Bunny Bottom Cookies remind our family to be joyful!  Easter celebrates so many things about the joys in life, but family is one of them & their smiles light up my life! These cookies are another way to make them smile.  (I make them on Good Friday, but they are almost always gone by Holy Saturday – rarely seeing Easter morning! Hahaha!)

These cookies are such a cute and fun way to celebrate Easter – your kids will love them!They’re actually way simpler than they may appear!They taste so good – soft cookies with a creamy layer of frosting.They are versatile! Keep the icing white, or decorate them with blue, green, or pink!

How to Make These Easter Bunny Cookies

(adapted from All Recipes)

2 3/4 cups all-purpose flour1 teaspoon baking soda1 1/4 cup butter2 cups white sugar2 eggs2 teaspoons vanilla extractOptional: 1/2 teaspoon almond extract

Best Buttercream Frosting Ingredients

(I’ve tried many, but my favorite recipe comes from my friend Jodi at Meaningful Mama)

1 cup butter (room temperature)1 cup unsalted butter (room temperature)2 lbs powdered sugar, or about 8 cups (sifted for best results)1/2 teaspoon salt2 teaspoons vanilla extract6 oz heavy whipping cream

Preheat the oven to 350 degrees Fahrenheit. Stir together flour, baking soda, and salt in a mixing bowl. Set aside.Cream together the butter and 2 cups of sugar in a large bowl, until light and fluffy. Beat in eggs 1 at a time then vanilla. Stir in the dry ingredients until just blended. Roll the dough out flat and use a circular cookie cutter to form your cookies.For the bunny, feet roll out almond size balls of dough flat to form the ovals’ needs.
Note: Some people recommend chilling the dough, but I normally don’t do that part.Place cookies 1 inch apart onto ungreased baking sheets.Bake for 8-10 minutes until lightly browned on the edges. Allow cookies and bunny feet to cool on a cooling rack before frosting.

Best Buttercream Frosting Directions

In a mixing bowl, cream shortening and butter until fluffy. Add sugar, one cup at a time, mixing a bit between each addition. When adding sugar, you will want to start the mixer slowly. Continue creaming until well blended.Add salt, vanilla, and 6 ounces of whipping cream. Blend on low speed until moistened. Beat at high speed until frosting is fluffy, 1-2 minutes.For coloring, I used a few drops of my chosen food dye colors.

Frost your cookie then place the bunny feet on top as pictured. You may need to add a small spread of frosting on the bottom of the bunny feet to better attach them to the cookie.Use ready-made frosting pens, which you can find in the baking aisle of your grocery store, to decorate to toes.Lastly, add a small marshmallow between the feet, as pictured below, to make your bunny bottom cookies as cute as can be!

Bunny Cookies Cooking Tips

To make sure there are no lumps in the flour, try sifting it together with the baking soda and salt.Make sure your butter is at room temperature (or at least slightly warmed up) before you cream it. Otherwise, you’ll have a hard time with cold butter straight from the refrigerator.Be sure not to over-stir the cookie mixture! Otherwise, it can create pockets of air in your cookies.

Bunny Cookies Recipe Variations

Try out fun colors for the frosting! Pink, green, and blue are pictured here, but you could also do yellow, purple, or any fun color your kids like!Decorate the bunny bottom like they have pants on! Maybe one has striped pants and another has polka dots. See what bottom type your kids think the Easter Bunny wears!Make the easter bunny a chocolate bunny! Replace 3/4 cups of flour with 3/4 cups of unsweetened cocoa powder then follow the recipe as written.
