I don’t know about you, but I love the taste of  chocolate covered cherries.  While making fudge recently, I wondered if there was a recipe for chocolate cherry fudge.  I found some online, but many had several ingredients, and seemed more complicated than I really wanted to deal with.  I thought there had to be an easier way, and I was right.  This is my Easy Chocolate Cherry Fudge Recipe and it takes just 3 ingredients.
I figured out a simple way to make chocolate cherry fudge. Â All you need is a bag of milk chocolate chips, a can of sweetened condensed milk, and a jar of maraschino cherries. Â If you prefer a darker chocolate, other chips will work well too. Â If you can not have red dye or do not like the taste of maraschino cherries, I think this recipe would also work well with dried cherries.
Simply heat the bag of chips and a the can of sweetened condensed milk on low heat.  Stirring frequently. While the chips are melting, cut about half of the  jar of cherries into halves or quarters.  With a paper towel dry off the extra liquid on the cherries.  When the chips have completely melted, remove the chocolate mixture from the heat and stir in the cherries.   Pour the fudge into a prepared square pan.  To prepare my pan, I sprayed a little cooking spray in the pan, and then added a layer of foil. The spray is to keep the foil from sticking.  I then added a layer of plastic wrap with the edges hanging over the side. Chill the fudge until it has set.
Just one last tip. Â While you might be tempted to add some of the maraschino juice from the jar to the fudge, it is not the best idea. Â It will make the fudge taste amazing, BUT the fudge will not set enough to neatly cut and serve even after being in the freezer for a couple of days. I found this out the hard way. Â My first batch of fudge is currently in the fridge, and we are eating it with a spoon! Â It tastes incredible, but it definitely does not look pretty.
