Delicious & Easy Homemade Fortune Cookies

Homemade fortune cookies are so fun to make!  They make Valentine’s Day a little extra special for everyone. 🙂

So when my husband and I started dating in high school,  we spent our first Valentine’s Day together…

I made his favorite meal (A Chinese dish) with homemade fortune cookies!   Since then, we’ve had Chinese food every year.

Are Homemade Fortune Cookies Hard to Make?

No!  In fact, you’ll be surprised at how easy these cookies are to make!   They do take a while to cool and harden, so allow yourself some time.   Don’t worry… it’s worth it!  They are such a fun addition to your dinner menu & you can put an adorable little note inside!

The cookie is by-far, the hit of the dinner!

How to Make Homemade Fortune Cookies:

1. Write or type out your “fortunes’ onto paper.
2. Cut it into small strips of paper. I print mine out first & then cut them when I print off the paper.
3. Get your ingredients ready…

Ingredients Needed for Fortune Cookies:

3 egg whites3/4 cup white sugar1/2 cup butter, melted and cooled1/4 teaspoon vanilla extract1/4 teaspoon almond extract1 cup all-purpose flour2 tablespoons water

Directions for Homemade Fortune Cookies:

When you crack the eggs, separate them (yolks in one bowl, egg whites in the other)Add the sugar to the egg whites and whisk with your whisking attachment (or whip by hand)Next, add the butter (MELTED!)Mix well.Add the almond extract and mixAdd the vanilla extract and mixAdd the water and mix.Last, add the flourMix Well.Heat your non-stick griddle or frying pan on low to medium heat and let it warm up.Drop about two tablespoons of the batter onto the pan and spread it QUICKLY so it makes a flat pancake that is close to 3 inches across.Cook them for about one minute.Flip with your spatula to do the other side for a minute. (they need to be golden on both sides).Flip it using the spatula and cook for about one minute on the other side.Note: You have to cook them long enough to get golden on the edge to have them crispy like in the restaurants. When it is done, remove it and let it cool just enough to touch. While it is still warm, take one of your cookies and place one of the fortunes in the center of the cookie and fold it over in half with the fortune inside.Bend in half again to make them look like “fortune cookies”.Let them harden over the next few hours.ENJOY!

(I have special ones for each child, so I put them into separate bowls.)

TIP:  You can also make special “favorite verse” cookies: Type out your favorite bible verse or quote, cut them into strips & put each one into a cookie.
